Artisan Bread Care

Because every meal deserves great bread.

Our artisan breads, buns, rolls and pretzels are available fully-baked frozen. To maintain their rich moisture content, never store thawed products in the refrigerator as it accelerates staling. If available, we recommend thawing your breads, buns, rolls and pretzels in a proofing box or at room temperature.

For all baking times below, preheat ovens with Steam to 428° F. Preheat ovens without steam to 374° F.

Craft Breads

Small Craft Loaf (approximately 9 oz)

  1. Thaw at room temperature for 30 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 4 – 6 minutes
  4. If available, steam 15 – 20 seconds with vent closed.

Large Craft Loaf (approximately 26.4 oz)

  1. Thaw at room temperature for 90 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 5 – 8 minutes
  4. If available, steam 15 – 20 seconds with vent closed.

Baguettes (6.2oz – 16 oz)

  1. Thaw at room temperature for 20 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 4 – 6 minutes
  4. If available, steam 15 seconds with vent closed.

Buns and Rolls

Buns & Rolls (1.2 oz – 4.2 oz)

  1. Thaw at room temperature for 15 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 3 – 5 minutes
  4. If available, steam 15 seconds with vent closed.

Small Ciabatta & Focaccia Loaves (3 oz – 6.3oz)

  1. Thaw at room temperature for 15 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 3 – 5 minutes
  4. If available, steam 15 seconds with vent closed.

Large Ciabatta & Focaccia Loaves (6.3oz – 14 oz)

  1. Thaw at room temperature for 30 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 5 – 8 minutes
  4. If available, steam 15 seconds with vent closed.

Pretzels

Pretzels without Salt

Preheat oven to 374°F – 400°F

  1. Thaw at room temperature for 30 minutes.
  2. Lightly spritz with water prior to baking for a crisper crust.
  3. Bake 3 minutes
  4. Serve warm or Cool for 30 minutes. Place in bag or bulk bin for resale.

Pretzels with Salt

Preheat oven to 374°F – 400°F

  1. Thaw at room temperature for 30 minutes.
  2. Lightly spritz with water. Dip into coarse pretzel salt.
  3. Bake 3 minutes
  4. Serve warm or Cool for 30 minutes. Do not place salted pretzels in poly bags.
